Ingredients

  • 2 tablespoons paprika

  • 1 tablespoon dried parsley

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • 5 cups vegetable broth

  • 1 can chickpeas, drained and rinsed

  • 16 ounces potato gnocchi or 1½ cups large pasta shells

  • 1½ cups cashew cream or coconut milk

  • ½ lemon, juiced (optional)

  • 1 large handful of kale, chopped


Instructions

  • In a large soup pot over medium heat, sauté the onion, leek, sweet potato, sun-dried tomatoes, and garlic until the sweet potato begins to soften, about 6 minutes.
