16 ounces potato gnocchi or 1½ cups large pasta shells

1½ cups cashew cream or coconut milk

½ lemon, juiced (optional)

In a large soup pot over medium heat, sauté the onion, leek, sweet potato, sun-dried tomatoes, and garlic until the sweet potato begins to soften, about 6 minutes.

Stir in the tomato paste, paprika, dried parsley, thyme, and salt.

Pour in the vegetable broth and add the chickpeas. Bring to a boil, then reduce to a simmer. Cover and cook for 10 minutes.
