Ingredients
1 ½ cups yellow rice (Spanish-style)
2 ¼ cups water
2 lbs boneless, skinless chicken breast, sliced into chunks
3 bell peppers (any color), thinly sliced
2 medium onions, thinly sliced
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp dried oregano
1 tsp paprika
1 tsp kosher salt
¼ tsp cayenne pepper (optional for heat)
¼ cup fresh cilantro, chopped
Instructions
1. Preheat your oven to 375°F.
2. In a 9×13-inch baking dish, add the uncooked yellow rice and water. Stir to combine.
3. In a large mixing bowl, combine the sliced chicken, bell peppers, and onions.
4. In a small bowl, mix together garlic powder, onion powder, cumin, oregano, paprika, salt, and cayenne pepper.
5. Sprinkle the spice mix over the chicken and vegetables, tossing everything together to evenly coat.
6. Spread the seasoned chicken and vegetables over the rice mixture in the baking dish.
7. Cover tightly with foil and bake for 1 hour.
8. Remove from the oven, discard the foil, and sprinkle with chopped cilantro before serving.
Notes
You can prep the chicken and veggies the night before and store them in the fridge to save time on baking day. To reheat, add a splash of water to maintain moisture. This recipe freezes well in individual portions.
