Description

A savory, one-pan shrimp and rice recipe with garlic butter sauce. Ideal for meal prep, quick dinners, and packed with flavor.


Ingredients

1 onion, finely chopped

4 garlic cloves, minced

2½ cups white rice

14 oz crushed tomatoes

4 cups vegetable broth

2 cups frozen peas

1 teaspoon salt

Black pepper to taste

For the shrimp:

1 pound shrimp, shelled and deveined

2 tablespoons olive oil

Salt and pepper to taste

For the garlic butter sauce:

2 tablespoons butter

4 garlic cloves, minced

½ cup vegetable broth

1 tablespoon fresh lemon juice

To serve:

Chopped fresh parsley

Lemon slices


Instructions

1. In a large sauté pan, heat olive oil over medium heat. Add chopped onion and garlic and cook until fragrant and translucent.

2. Stir in the rice to coat it in the oil. Add the crushed tomatoes, broth, and peas. Season with salt and pepper.

3. Lower the heat, cover the pan, and let the rice simmer for about 15 minutes or until the liquid is absorbed and rice is tender.

4. While the rice cooks, heat a separate pan over high heat and quickly sear the shrimp until lightly golden on both sides. Remove from pan.

5. In the same pan, melt butter and add garlic, cooking for 30 seconds. Add broth and lemon juice, then simmer for about 5 minutes to reduce slightly.

6. Once rice is done, remove from heat and add the shrimp. Cover and let steam for 5 more minutes.

7. Serve with the garlic butter sauce poured over and garnish with parsley and lemon slices.

Notes

You can substitute brown rice, but it will require longer cooking time and more liquid. For extra heat, try adding red pepper flakes or Cajun seasoning to the shrimp.
