Ingredients
1 pound gnocchi
1 pint cherry tomatoes
4 garlic cloves, peeled and smashed
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon dried thyme
2 tablespoons light cream cheese, softened
2 tablespoons sun-dried tomato pesto or tomato-based pesto
Instructions
1. Preheat your oven to 425°F.
2. On a large sheet pan, combine the gnocchi, cherry tomatoes, smashed garlic, olive oil, and all dried herbs and spices. Toss everything well to coat.
3. Roast in the oven for 15 minutes, or until the tomatoes are blistered and the gnocchi is golden.
4. Transfer the roasted mixture to a large bowl while still hot.
5. Add the softened cream cheese and sun-dried tomato pesto, stirring until everything is creamy and well combined.
6. Garnish with additional dried basil if desired and serve warm.
Notes
To make it vegan, substitute the cream cheese with a dairy-free alternative and ensure the pesto is vegan-friendly. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of water or milk to keep the sauce creamy.
