This tropical-inspired Meal Prep Pineapple Chicken is juicy, flavorful, and perfect for a healthy make-ahead lunch or dinner. Marinated in pineapple juice, thyme, and oregano, then baked with caramelized pineapple chunks, this easy dish is gluten-free, dairy-free, and packed with lean protein.


Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 cup pineapple juice

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon cracked black pepper

1/2 teaspoon sea salt

1 cup pineapple chunks


Instructions

1. In a large resealable plastic bag or shallow container, combine the chicken breasts, olive oil, pineapple juice, thyme, oregano, black pepper, and sea salt.

2. Seal and refrigerate for at least 20 minutes to marinate.

3. Preheat your oven to 425°F.

4. Remove the chicken from the marinade and place it on a baking sheet. Scatter pineapple chunks evenly around the chicken.

5. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.

6. Let the chicken rest for 5 minutes before slicing.

7. Serve warm with roasted pineapple pieces.

Notes

For extra flavor, reserve some of the marinade (before adding raw chicken) and use it as a drizzle after baking. To keep chicken moist during reheating, cover with a damp paper towel or reheat gently in a pan with a splash of water or juice.
