Ingredients
- For the Tzatziki Dressing:
- 1/2 cup plain Greek yogurt
- 1 tablespoon white vinegar
- 1 tablespoon olive oil
- 1 large garlic clove, minced
- 1 teaspoon dried dill
- 2 tablespoons lemon juice (from about 1 lemon)
- 1 tablespoon lemon zest (from about 1 lemon)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Salad:
- 1 head romaine lettuce, chopped (about 4 cups)
- 1 cup diced tomatoes
- 1 cup diced English cucumber
- 1/2 cup diced bell pepper (red, orange, or yellow)
- 1/2 cup kalamata olives, pitted and quartered
- 1/4 small red onion, finely chopped
- 1/3 cup crumbled feta cheese
- Pita chips, for serving (optional)
Instructions
- Prepare the dressing: Combine yogurt, vinegar, olive oil, garlic, dill, lemon juice, lemon zest, salt, and pepper in a food processor or blender. Blend until smooth. Chill in the refrigerator while making the salad.
- Assemble the salad: In a large bowl, mix together the romaine lettuce, tomatoes, cucumber, bell peppers, olives, red onion, and feta cheese.
- Dress and serve: Drizzle the desired amount of tzatziki dressing over the salad and toss to coat evenly. Serve right away with pita chips on the side if desired.
