Description
A bright and nourishing Mediterranean-style soup made with chickpeas, orzo, lemon juice, tahini, and fresh herbs. Vegan, comforting, and ready in 30 minutes.
Ingredients
1 tablespoon olive oil or 1/4 cup water
1/2 medium onion, diced
3 carrots, peeled and diced
3 cloves garlic, minced
7 to 8 cups vegetable broth or water
1 cup whole wheat orzo
2 cans chickpeas, drained and rinsed
1/4 cup tahini
1/4 to 1/2 cup fresh lemon juice
2 cups baby kale or spinach
Fresh dill, chopped
Salt, to taste
Black pepper or lemon-pepper seasoning, to taste
Instructions
1. Heat olive oil or water in a large pot over medium heat. Add onion and carrots and sauté until softened.
2. Stir in garlic and cook briefly.
3. Add broth, bring to a boil, then add orzo and chickpeas. Simmer until orzo is tender.
4. Remove from heat and stir in tahini and lemon juice.
5. Add greens and dill, season to taste, and let sit a few minutes before serving.
Notes
Adjust lemon juice to taste. Add extra broth when reheating, as orzo absorbs liquid.
