Instructions

Make the Croutons: Preheat oven to 390°F (or 350°F with fan). Toss the bread cubes with olive oil and salt, spread them on a baking tray, and bake for 15 minutes, stirring twice until golden and crisp. Let cool.

Prepare the Dressing: Combine all dressing ingredients in a jar and shake well to mix.

Assemble the Salad: Set aside a little parmesan for garnish. In a large bowl, combine the lettuce, tomatoes, bell pepper, red onion, olives, and cooled croutons. Pour the dressing over the salad and toss until evenly coated.
