Description
ONE PAN Balsamic Chicken and Veggies is a simple sheet pan dinner made with tender chicken, roasted vegetables, and a bold balsamic glaze.
Ingredients
Nonstick cooking spray
6 tablespoons balsamic vinegar
1/2 cup fat-free Italian dressing
1 1/4 pounds chicken breast or tenderloins, trimmed
2 heads broccoli, chopped
1 cup baby carrots, halved
1/2 pint cherry tomatoes
1 teaspoon Italian seasoning
3 tablespoons olive oil
1/2 teaspoon garlic powder
Fresh parsley (optional)
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F and prepare a sheet pan.
2. Whisk balsamic vinegar and Italian dressing.
3. Marinate chicken with part of the mixture for at least 30 minutes.
4. Arrange vegetables on the pan and season.
5. Roast vegetables for 10–15 minutes.
6. Add chicken to the pan and brush with balsamic mixture.
7. Bake until chicken reaches 165°F.
8. Serve with remaining sauce and optional parsley.
Notes
For firmer tomatoes, add them later in the roasting process. Serve with rice or quinoa if desired.
