Ingredients
1 teaspoon sea salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon sweet paprika
1 teaspoon dried thyme
½ teaspoon black pepper
¼ cup olive oil
5 boneless, skinless chicken thighs
¼ cup water
1 onion, finely diced
1 teaspoon minced garlic
1 cup jasmine rice
1½ cups low-sodium chicken broth
Fresh thyme (optional, for garnish)
Mixed leafy greens (for serving)
Instructions
1. Mix spices and olive oil, then coat chicken evenly.
2. Sear chicken in a hot skillet until browned, then remove.
3. Deglaze pan with water, scraping browned bits.
4. Sauté onion and garlic until fragrant.
5. Add rice and broth, stir, and bring to a simmer.
6. Return chicken to pan, cover, and cook on low.
7. Rest off heat, then garnish and serve.
Notes
