Description
One-pan creamy gnocchi with spinach cooked in a rich garlic cream sauce for a quick and comforting vegetarian dinner.
Ingredients
1 tablespoon olive oil
8 ounces fresh spinach
Salt and black pepper, to taste
16 ounces potato gnocchi
½ cup low-sodium vegetable broth
1 cup heavy cream
4 garlic cloves, minced
½ teaspoon Italian seasoning
½ teaspoon smoked paprika
¼ teaspoon salt
Red pepper flakes, to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add spinach with salt and pepper and cook until wilted. Remove and set aside.
2. Add gnocchi, vegetable broth, cream, garlic, Italian seasoning, smoked paprika, and salt to the skillet. Stir and bring to a gentle boil.
3. Cover and cook for 5 minutes until gnocchi is tender and sauce thickens.
4. Return spinach to the pan, stir, and cook 2–3 minutes. Adjust seasoning and serve.
Notes
Adjust red pepper flakes for heat. Add mushrooms or peas for variation.
