Description
A fast, healthy Mediterranean-style shrimp skillet cooked with vegetables, warm spices, and olive oil in one pan.
Ingredients
2 teaspoons olive oil
1 small onion, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
¼ teaspoon crushed red pepper flakes
¼ teaspoon black pepper
2 cups baby spinach
1¼ pounds shrimp, peeled and deveined
Optional toppings: crumbled feta cheese, chopped black olives
For serving: cooked couscous, rice, or orzo
Instructions
1. Warm olive oil in a large skillet over medium heat.
2. Sauté chopped onion and bell pepper for 5–7 minutes until softened.
3. Add garlic, oregano, cumin, coriander, salt, crushed red pepper, and black pepper. Cook 30 seconds.
4. Stir in spinach and cook until wilted.
5. Arrange shrimp in a single layer and cook 1–2 minutes per side until pink.
6. Serve over couscous, rice, or orzo with optional toppings.
Notes
Cook shrimp just until opaque to keep them tender. Serve immediately for best texture.
