Description
One-Pan Mediterranean Veggie Bake is a simple roasted vegetable dish made with fresh produce, olive oil, and classic seasoning. It works well as a side dish or a light main.
Ingredients
2 medium zucchini, chopped into 1-inch pieces
1 pint cherry tomatoes
1 yellow bell pepper, chopped into 1-inch pieces
1 red onion, chopped into 1-inch pieces
2 to 3 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian seasoning
Optional: 1 head of garlic or several whole garlic cloves
Instructions
1. Preheat oven to 425°F (218°C).
2. Place chopped vegetables in a large bowl.
3. Drizzle with olive oil and add salt, pepper, and Italian seasoning. Toss well.
4. Spread vegetables on a baking sheet in a single layer. Add garlic if using.
5. Roast for 20 to 25 minutes until tender and lightly caramelized.
6. Serve warm or store for later use.
Notes
Cut vegetables evenly for best results. Store leftovers in an airtight container for up to four days.
