One-Pot Chicken Alfredo Rice That Delivers Creamy Comfort Fast

Description

Creamy chicken, tender rice, and vegetables come together in one skillet for a comforting and easy dinner.


Ingredients

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, cubed

Salt and black pepper to taste

2 cloves garlic, minced

1 1/2 cups frozen mixed vegetables

1 cup long grain white rice

2 cups low-sodium chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese, divided


Instructions

1. Heat olive oil in a large non-stick skillet over medium-high heat.

2. Season chicken with salt and pepper, then cook until browned and cooked through. Add garlic during the last 30 seconds. Remove chicken and set aside.

3. Add rice and chicken broth to the skillet. Bring to a boil, reduce heat, cover, and simmer until rice is tender.

4. Heat vegetables according to package directions.

5. Stir chicken, vegetables, cream, and half of the Parmesan into the rice. Cook until heated through.

6. Top with remaining Parmesan and serve.

Notes

Stir gently to keep rice fluffy. Add a splash of broth when reheating if needed.
