Description
A cozy, satisfying one pot chicken dinner made with golden seared chicken thighs, fragrant jasmine rice, and simple pantry spices—all in under 40 minutes.
Ingredients
1 teaspoon sea salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon sweet paprika
1 teaspoon dried thyme
½ teaspoon freshly ground black pepper
¼ cup olive oil
5 boneless, skinless chicken thighs
¼ cup water
1 small onion, finely diced
1 teaspoon minced garlic
1 cup jasmine rice
1½ cups low-sodium chicken broth
Fresh thyme sprigs (optional, for garnish)
Mixed greens (for serving)
Instructions
1. In a shallow bowl, combine sea salt, onion powder, garlic powder, paprika, thyme, black pepper, and olive oil. Add the chicken thighs and toss to coat thoroughly.
2. Heat a large deep skillet or pan over medium-high heat. Cook the chicken for 6 to 8 minutes, turning once, until both sides are golden brown. Remove the chicken and set aside.
3. Pour the water into the hot pan and scrape up any browned bits from the bottom to infuse flavor into the dish.
4. Add diced onion and minced garlic to the pan. Cook for 1 to 2 minutes, stirring constantly, until fragrant.
5. Add jasmine rice and chicken broth to the pan. Stir and bring to a simmer. Reduce heat to low, return the chicken to the pan, and cover with a lid.
6. Let it simmer for 15 minutes. Then remove from heat and keep it covered for another 10 minutes to allow the rice to finish steaming.
7. Garnish with fresh thyme if desired and serve with a side of mixed greens.
Notes
To add vegetables, stir in frozen peas or chopped bell peppers during the last 5 minutes of simmering. Swap jasmine rice for basmati or brown rice, adjusting liquid and cook time accordingly.
