Description

Crispy breaded chicken cooked and finished in one skillet with marinara and melted mozzarella for an easy, comforting dinner.


Ingredients

1 teaspoon salt

1 teaspoon black pepper

1 cup all-purpose flour

1 large egg

1 cup plain breadcrumbs

1/2 cup grated Parmesan-style cheese

1.5 to 2 pounds chicken cutlets

1 cup olive oil

1/2 cup diced onion

2 cloves garlic, thinly sliced

2 cups marinara tomato sauce

6 ounces mozzarella cheese, sliced

Fresh basil, for garnish

Crushed red pepper flakes, for garnish

Cooked spaghetti or rice, for serving


Instructions

1. Preheat oven to 400°F and warm olive oil in a large oven-safe skillet.

2. Prepare flour, egg, and breadcrumb mixtures.

3. Coat chicken in flour, egg, then breadcrumbs.

4. Fry chicken until golden and nearly cooked.

5. Drain excess oil, leaving about one tablespoon.

6. Sauté onion and garlic briefly.

7. Add marinara sauce and simmer.

8. Return chicken to skillet and top with mozzarella.

9. Bake until cheese melts and chicken reaches 165°F.

10. Serve hot with pasta or rice.

Notes

Work in batches to keep the coating crisp. Reheat leftovers in the oven for best texture.
