Description

A rich and comforting one-pot creamy beef pasta made with tender ground beef, short pasta, and a smooth tomato cream sauce. Perfect for easy weeknight dinners.


Ingredients

1 1/2 tablespoons olive oil

2 garlic cloves, minced

1 small onion, finely chopped

1 pound lean ground beef

2 teaspoons dried Italian herb blend

2 tablespoons tomato paste

1 can (14 ounces) crushed tomatoes

1/2 teaspoon red pepper flakes (optional)

1 1/2 teaspoons kosher salt

1/2 teaspoon ground black pepper

4 cups low-sodium vegetable broth

12 ounces short pasta

3/4 cup heavy cream


Instructions

1. Heat olive oil in a large pot and sauté garlic and onion until fragrant.

2. Add ground beef and cook until browned. Stir in herbs and tomato paste.

3. Pour in crushed tomatoes, broth, salt, pepper, and red pepper flakes. Add pasta.

4. Simmer uncovered, stirring often, until pasta is tender.

5. Stir in heavy cream and simmer briefly until saucy.

6. Remove from heat and serve with Parmesan and parsley if desired.

Notes

Stir frequently near the end of cooking to prevent sticking. Add a splash of broth when reheating to loosen the sauce.
