Description
A quick one-pot cauliflower rice skillet with vegetables and Mediterranean-inspired flavor.
Ingredients
2 tablespoons olive oil
1/2 small onion, diced
1 cup sliced mushrooms
1 garlic clove, minced
10 to 12 oz cauliflower rice
1 small zucchini, sliced
2 to 3 Roma tomatoes, diced
1/3 to 1/2 cup vegetable broth
2 cups chopped spinach
3 to 4 tablespoons sun-dried tomatoes
Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add onion and mushrooms and cook until softened.
3. Stir in garlic and cook briefly.
4. Add cauliflower rice, zucchini, tomatoes, and broth.
5. Cook until vegetables are tender and liquid evaporates.
6. Stir in spinach and sun-dried tomatoes until wilted.
7. Season and serve warm.
Notes
Serve as-is or with plant-based protein. Avoid excess liquid for best texture.
