Creamy garlic chicken and rice cooked in one skillet for a fast, comforting dinner.
Ingredients
1 pound boneless, skinless chicken breasts, cubed
3/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
4 cloves garlic, minced
1 cup uncooked white rice
3 cups low-sodium chicken broth
1/2 cup heavy cream
2 cups fresh spinach
1/4 cup grated Parmesan cheese
Instructions
1. Season cubed chicken with garlic salt and black pepper.
2. Cook chicken in a non-stick skillet over medium-high heat until golden.
3. Add garlic and sauté briefly.
4. Stir in rice and broth, bring to a boil, then simmer covered.
5. Add cream and spinach and cook until tender.
6. Stir in Parmesan and serve warm.
Notes
Add extra broth when reheating to maintain a creamy texture.
