Description
Creamy, comforting spinach rice cooked entirely in one pot for easy cleanup and rich flavor.
Ingredients
1 medium yellow onion, diced
2 tablespoons butter
2 cups medium-grain white rice
4 cups low-sodium vegetable or chicken stock
1 cup heavy cream
5 ounces garlic herb soft cheese
8 to 10 ounces fresh spinach, chopped
1/4 teaspoon MSG (optional)
1/4 teaspoon black pepper
1 cup grated parmesan cheese
Instructions
1. Melt butter and sauté onion until translucent.
2. Toast rice for 1 to 2 minutes.
3. Add 3 cups stock, cream, and soft cheese; stir until melted.
4. Simmer uncovered for 10 minutes, stirring occasionally.
5. Add spinach, remaining stock, seasoning, cover and cook 5 to 7 minutes.
6. Stir in parmesan, rest briefly, and serve.
Notes
Add extra stock when reheating to maintain creaminess.
