Description
A flavorful one-pot Mediterranean rice dish made with chickpeas, spices, lemon, and fresh herbs.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
1 medium red bell pepper, diced
4 garlic cloves, minced
1½ teaspoons ground cumin
½ teaspoon ground coriander
¼ teaspoon ground turmeric
2¼ cups vegetable broth
1½ cups basmati rice
1 can chickpeas, drained and rinsed
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
¾ cup Kalamata olives
½ cup fresh parsley
Salt and black pepper
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and red bell pepper and cook until softened.
3. Stir in garlic and spices and cook until fragrant.
4. Add broth, rice, and chickpeas and bring to a boil.
5. Reduce heat, cover, and simmer until rice is tender.
6. Rest off heat, then fluff and stir in lemon, olives, and parsley.
Notes
Rinse basmati rice before cooking for best texture.
