Description
A rich and comforting one-pot pasta made with tender shrimp, fresh spinach, tomatoes, and a creamy Parmesan sauce.
Ingredients
1 tablespoon olive oil
1 cup diced onion
1 teaspoon minced garlic
2 cups low-sodium broth
1 can diced tomatoes
8 ounces tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
Black pepper to taste
10 ounces penne pasta
1/3 cup half and half
1/2 cup grated Parmesan
1 pound raw shrimp
5 ounces baby spinach
Instructions
1. Warm oil and cook onion until soft, then add garlic.
2. Add broth, tomatoes, sauce, seasonings, and pasta.
3. Simmer covered until pasta is al dente.
4. Stir in cream, Parmesan, and shrimp.
5. Cook until shrimp is opaque.
6. Add spinach, remove from heat, and stir gently.
7. Top with remaining Parmesan and serve.
Notes
Use large shrimp for best texture. Add extra broth if pasta absorbs too much liquid.
