Ingredients
2 boneless, skinless chicken breasts (about 8 ounces each)
1 teaspoon smoked paprika
3/4 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
Olive oil cooking spray
1 1/2 teaspoons fresh lime juice
1 1/4 teaspoons honey
Chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil.
2. Slice each chicken breast in half horizontally to create four thinner pieces. Pound to 3/4 inch thickness.
3. Combine smoked paprika, cumin, coriander, salt, garlic powder, and black pepper.
4. Arrange chicken on baking sheet. Spray lightly with olive oil and season both sides.
5. Stir together lime juice and honey.
6. Bake for 9–12 minutes until nearly cooked through. Brush with glaze and bake 1 more minute until internal temperature reaches 165°F.
7. Rest for a few minutes, garnish with parsley, and serve.
