- Peach Salad made easy with arugula, mozzarella & lemon-Dijon dressing. A vibrant summer favorite in just 10 minutes.
Ingredients

- 3 small ripe peaches or 2 large peaches
- 4 cups loosely packed arugula
- 5 oz mozzarella cheese (buffalo or cow’s milk)
- 1/2 cup marinated artichoke hearts, thinly sliced
Dressing:

- 1 1/2 tablespoons fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 4 1/2 tablespoons extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Slice the peaches: Halve and pit the peaches, then cut each half into quarters or sixths depending on size.
- Make the dressing: Combine lemon juice, mustard, olive oil, salt, and pepper in a jar. Shake until well blended.
- Toss the arugula: Mix the arugula with about 2 tablespoons of the dressing.
- Prep the cheese: Tear the mozzarella into bite-sized pieces.
- Assemble the salad: On a large platter, layer arugula, peach slices, mozzarella pieces, and sliced artichokes. Drizzle the remaining dressing over the top.
- Serve immediately for best flavor and texture.
