Description

  • Peach Salad made easy with arugula, mozzarella & lemon-Dijon dressing. A vibrant summer favorite in just 10 minutes.

Ingredients

    • 3 small ripe peaches or 2 large peaches
    • 4 cups loosely packed arugula
    • 5 oz mozzarella cheese (buffalo or cow’s milk)
    • 1/2 cup marinated artichoke hearts, thinly sliced

Dressing:

    • 1 1/2 tablespoons fresh lemon juice
    • 1 1/2 teaspoons Dijon mustard
    • 4 1/2 tablespoons extra virgin olive oil
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper


Instructions

  • Slice the peaches: Halve and pit the peaches, then cut each half into quarters or sixths depending on size.
  • Make the dressing: Combine lemon juice, mustard, olive oil, salt, and pepper in a jar. Shake until well blended.
  • Toss the arugula: Mix the arugula with about 2 tablespoons of the dressing.
  • Prep the cheese: Tear the mozzarella into bite-sized pieces.
  • Assemble the salad: On a large platter, layer arugula, peach slices, mozzarella pieces, and sliced artichokes. Drizzle the remaining dressing over the top.
  • Serve immediately for best flavor and texture.
