Description

  • Pimento Pasta Salad blends creamy cheddar and sweet pimentos for a bold, crowd-pleasing side dish—perfect for picnics, potlucks, and summer meals.

Ingredients

  • 1 pound elbow macaroni

  • 3 jars (about 4 ounces each) pimento peppers, drained and chopped

  • 2 cups shredded cheddar cheese

  • 3/4 cup mayonnaise

  • 1 teaspoon cayenne pepper

  • Kosher salt, to taste

  • 1/4 cup chopped fresh chives


Instructions

  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, following the package instructions. Drain and set aside to cool slightly.

  • In a large mixing bowl, combine the cooked macaroni, chopped pimento peppers, shredded cheddar cheese, mayonnaise, and cayenne pepper. Stir until everything is evenly coated.

  • Season with kosher salt to taste. Mix well.

  • Sprinkle with chopped chives just before serving.
