Ingredients

1 pound elbow macaroni

3 jars (about 4 ounces each) pimento peppers, drained and chopped

2 cups shredded cheddar cheese

3/4 cup mayonnaise

1 teaspoon cayenne pepper

Kosher salt, to taste

1/4 cup chopped fresh chives
Instructions

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, following the package instructions. Drain and set aside to cool slightly.

In a large mixing bowl, combine the cooked macaroni, chopped pimento peppers, shredded cheddar cheese, mayonnaise, and cayenne pepper. Stir until everything is evenly coated.

Season with kosher salt to taste. Mix well.
