Description
A cozy, creamy chowder made with tender potatoes, savory sausage, wild rice, and vegetables simmered to perfection.
Ingredients
1 tablespoon olive oil
6 chicken or turkey sausages, casings removed
1 medium onion, chopped
2 celery stalks, sliced
2 carrots, sliced
2 garlic cloves, minced
½ teaspoon dried thyme
3 tablespoons all-purpose flour
4 cups low-sodium vegetable or chicken broth
2 bay leaves
½ cup wild rice
3 medium potatoes, peeled and diced
1½ cups half-and-half or light cream
Salt and pepper, to taste
Chopped fresh parsley (optional)
Instructions
1. Heat olive oil and brown sausage, breaking it apart. Transfer aside.
2. Cook onion, celery, and carrots on low for 10 minutes. Add garlic and thyme.
3. Stir in flour to form a paste; cook 2 minutes.
4. Return sausage; add a small splash of broth to deglaze, then add remaining broth.
5. Add bay leaves and wild rice; simmer 30 minutes.
6. Add potatoes; cook 15 minutes until tender.
7. Stir in half-and-half. Season and serve warm.
Notes
Use chicken or turkey sausage for a lighter flavor. For dairy-free, use coconut milk or almond cooking cream. Add corn for extra sweetness.
