Description

Potato Tuna Salad Without Mayo is creamy, healthy, and full of flavor using hummus and sweet potato. Perfect for wraps, bowls, and picnics.


Ingredients

  • 1 can (5–6 oz) unsalted tuna in water, drained

  • ½ cup baked sweet potato, cooled and cut into chunks

  • ¼ cup chopped cherry or grape tomatoes

  • ¼ cup chopped celery

  • 1 scallion (green part only), finely chopped

  • 23 tablespoons hummus (plain or garlic)

  • 1 tablespoon Dijon mustard

  • Sea salt and ground black pepper, to taste


Instructions

  • Prepare sweet potato – Bake the sweet potato ahead of time so it has time to cool. Once cooled, peel if desired and cut into bite-sized chunks.

  • Drain tuna – Open and drain the tuna. Place it in a mixing bowl and flake it apart with a fork.

  • Combine ingredients – Add the sweet potato chunks, tomatoes, celery, and scallion to the tuna.

  • Add creaminess – Stir in hummus and Dijon mustard until the salad reaches your preferred creaminess.

  • Season – Add sea salt and black pepper to taste.

 

  • Serve – Enjoy over a bed of lettuce with cucumber and mushrooms, or use as a filling for a sandwich or wrap.
