Juicy chicken thighs, fragrant rice, and caramelized Moroccan-spiced sweet potatoes come together in this quick and easy pressure cooker chicken meal prep. Ready in under an hour and packed with bold flavor, it’s your new go-to for healthy lunches.
Ingredients
For the Chicken and Rice:
4 boneless, skinless chicken thighs
1 tablespoon olive oil
1 tablespoon Za’atar seasoning (or your favorite salt-free spice blend)
1 teaspoon salt
1 cup long grain white rice
1 1/4 cups water or low-sodium chicken broth
For the Moroccan-Spiced Sweet Potatoes:
2 medium sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Rub the chicken thighs with Za’atar, olive oil, and salt.
2. Set the pressure cooker to sauté mode. Sear chicken on both sides for 2–3 minutes until lightly browned. Remove and set aside.
3. Add rice and water or broth to the pressure cooker, stirring to deglaze the bottom.
4. Place the seared chicken on top of the rice.
5. Seal the lid and cook on high pressure for 8 minutes. Let the pressure naturally release for 10 minutes before opening.
6. While the chicken and rice cook, preheat the oven to 400°F (200°C).
7. Toss the cubed sweet potatoes in olive oil and spices.
8. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and golden.
9. Divide the chicken, rice, and sweet potatoes into 4 meal prep containers.
10. Let cool before sealing and refrigerating.
Notes
You can substitute Za’atar with your favorite spice blend.
Sweet potatoes can be made ahead and reheated in an air fryer for crispiness.
Use chicken breasts if preferred, but reduce pressure cook time to 6 minutes.
