Ingredients

3 cups cooked quinoa

1 (15 oz) can chickpeas, drained and rinsed

1 cup chopped cucumber

1 cup quartered cherry tomatoes

½ cup chopped red or yellow bell pepper

½ cup chopped carrots

¼ cup chopped red onion

¼ cup chopped fresh parsley

2 tablespoons olive oil

1 tablespoon white balsamic vinegar

2–3 tablespoons crumbled feta cheese

½ teaspoon freshly ground black pepper

¼ teaspoon sea salt
Instructions

In a large mixing bowl, combine the quinoa, chickpeas, cucumber, tomatoes, bell pepper, carrots, red onion, and parsley.

Drizzle with olive oil and vinegar, then add feta cheese, black pepper, and salt.

Gently toss everything together until evenly mixed.

Taste and adjust seasoning if needed.
