Description

  • Quinoa Chickpea Salad made easy—quick, fresh, protein-rich, and perfect for meal prep, vegetarian diets, or healthy lunches.

Ingredients

  • 3 cups cooked quinoa

  • 1 (15 oz) can chickpeas, drained and rinsed

  • 1 cup chopped cucumber

  • 1 cup quartered cherry tomatoes

  • ½ cup chopped red or yellow bell pepper

  • ½ cup chopped carrots

  • ¼ cup chopped red onion

  • ¼ cup chopped fresh parsley

  • 2 tablespoons olive oil

  • 1 tablespoon white balsamic vinegar

  • 23 tablespoons crumbled feta cheese

  • ½ teaspoon freshly ground black pepper

  • ¼ teaspoon sea salt


Instructions

  • In a large mixing bowl, combine the quinoa, chickpeas, cucumber, tomatoes, bell pepper, carrots, red onion, and parsley.

  • Drizzle with olive oil and vinegar, then add feta cheese, black pepper, and salt.

  • Gently toss everything together until evenly mixed.

  • Taste and adjust seasoning if needed.
