Description
A quick and healthy one-pan meal combining quinoa, turkey sausage, and colorful bell peppers for a satisfying dinner.
Ingredients
1 1/2 cups vegetable stock
3/4 cup quinoa, rinsed
1 pound Italian-style turkey sausage, casings removed
1 medium sweet red bell pepper, chopped
1 medium green bell pepper, chopped
3/4 cup sweet onion, chopped
1 garlic clove, minced
1/4 teaspoon garam masala
1/4 teaspoon black pepper
1/8 teaspoon salt
Instructions
1. Pour the vegetable stock into a small saucepan and bring it to a boil.
2. Stir in the rinsed quinoa, then lower the heat. Cover and simmer for 12 to 15 minutes, or until the liquid is absorbed. Remove from the heat.
3. While the quinoa cooks, place the turkey sausage in a large skillet over medium-high heat. Cook and crumble it as it browns.
4. Add the chopped red pepper, green pepper, and onion. Cook for 8 to 10 minutes, stirring occasionally, until the vegetables soften and the sausage is fully cooked.
5. Stir in the garlic, garam masala, black pepper, and salt. Cook for 1 minute more.
6. Add the cooked quinoa to the skillet and stir everything together until well combined.
7. Serve warm.
Notes
Rinse quinoa thoroughly before cooking for best texture.
Adjust seasoning to taste.
Store leftovers in an airtight container for up to 3 days.
