Ingredients

  • 1 large green papaya, peeled and seeded

  • ½ small head purple cabbage

  • 4 large carrots

  • 2 ripe mangos, peeled and sliced

  • 2 red bell peppers, thinly sliced

  • 2 medium avocados, diced or sliced

  • 1 cup chopped fresh parsley or cilantro

  • ¼ cup white vinegar

  • Juice of 2 limes

  • Cayenne pepper, to taste

  • ½ cup unsalted peanuts, chopped


Instructions

  • Begin by washing all your produce thoroughly. Peel the green papaya, remove the seeds, and cut it into large chunks. Shred the papaya using a food processor, spiralizer, or julienne it by hand. Thinly slice or shred the purple cabbage, and do the same with the carrots. Place everything into a large mixing bowl.

  • Slice the mangos and red bell peppers into thin strips. Dice or slice the avocados. Finely chop the parsley or cilantro. Add all of these to the bowl with the other vegetables.

  • Pour the white vinegar and lime juice over the salad. Sprinkle in a few dashes of cayenne pepper to your preferred heat level. Mix everything together until well combined. Taste and adjust seasoning if needed.

  • Finish by sprinkling the chopped unsalted peanuts over the top just before serving.
