A high-protein, flavorful meal prep with garlic herb chicken, Parmesan roasted potatoes, and broccoli—all tied together with a creamy ranch drizzle. This simple and satisfying lunch prep stays fresh all week and is perfect for busy schedules.
Ingredients
2 lbs russet potatoes, diced into ¾-inch cubes
⅓ cup grated Parmesan cheese
½ tsp garlic powder
¼ tsp paprika
3 Tbsp cooking oil, divided
½ tsp salt, divided
¼ tsp black pepper
1 lb broccoli florets (fresh or frozen)
1 lb boneless, skinless chicken breast
1 Tbsp garlic herb seasoning
½ cup ranch dressing (for serving – optional, 2 Tbsp per meal)
Instructions
1. Preheat oven to 400°F. Clean and dice the potatoes into small, even pieces.
2. In a bowl, mix Parmesan, garlic powder, paprika, and ¼ tsp salt. Add potatoes to a large bowl, drizzle with 1 Tbsp oil, sprinkle with the Parmesan mix, and toss well.
3. Spread the seasoned potatoes on a parchment-lined baking sheet. Roast for 30 minutes, flipping halfway, until golden and crispy.
4. In another bowl, toss broccoli florets with 1 Tbsp oil, ¼ tsp salt, and black pepper.
5. Spread broccoli on a separate parchment-lined baking sheet and roast for 20 minutes, stirring halfway through, until edges are browned.
6. While the veggies roast, slice each chicken breast in half horizontally to create thinner fillets. Season both sides with garlic herb seasoning. Heat a skillet over medium with 1 Tbsp oil. Cook chicken for 5–6 minutes per side, until golden and cooked through.
7. Let cooked chicken rest for 5 minutes, then slice into strips.
8. Divide potatoes, broccoli, and chicken evenly between four containers. If desired, include a small container with 2 Tbsp ranch dressing per meal. Refrigerate and enjoy throughout the week.
Notes
You can substitute frozen broccoli if needed—no need to thaw first. For extra crispy potatoes, avoid overcrowding the pan. Store meals in airtight containers for up to 4 days. Dressing is best added after reheating.
