Description
A bright, naturally sweet soup made with carrots, apples, and fresh ginger for a smooth and comforting bowl.
Ingredients
1 pound carrots, chopped (no need to peel)
2 to 3 sweet apples (about 15 ounces), cored and chopped
1-inch piece fresh ginger, chopped
3 garlic cloves, crushed
½ teaspoon ground coriander
4 cups vegetable broth or water
Salt and black pepper, to taste
Instructions
1. In a large pot, combine the chopped carrots, apples, ginger, garlic, and coriander.
2. Pour in the vegetable broth or water and bring to a boil over high heat.
3. Reduce heat, cover, and let simmer for about 10 minutes, or until the carrots are soft.
4. Season with salt and pepper to taste.
5. Use an immersion blender or countertop blender to blend the soup until smooth.
6. Reheat gently if needed and serve warm with your favorite bread or crackers.
Notes
This soup freezes well and reheats smoothly. Add extra ginger for spice or coconut milk for creaminess.
