Description

A creamy, comforting soup made with roasted red peppers, feta cheese, and vegetables, blended smooth and gently simmered.


Ingredients

1 tablespoon olive oil

1 block feta cheese

3 red bell peppers, chopped

1 medium onion, chopped

1 whole garlic bulb, top sliced off

1 medium carrot, sliced

1 celery stalk, sliced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon crushed red pepper flakes

3 cups vegetable broth

1 cup heavy cream

Additional salt and pepper, to taste

Fresh basil or cilantro, for garnish

Optional: Bread or grilled cheese, for serving


Instructions

1. Preheat oven to 400°F.

2. Arrange peppers, onion, carrot, celery, garlic bulb, and feta in a baking dish. Drizzle with olive oil and season.

3. Roast for 40–45 minutes until tender and lightly charred.

4. Cool slightly, squeeze garlic cloves out, and blend with vegetable broth until smooth.

5. Optionally strain for a silkier texture.

6. Stir in heavy cream and simmer gently. Adjust seasoning.

7. Serve hot with garnish and optional bread.

Notes

Straining is optional but recommended for a smoother texture. Adjust cream quantity for desired richness.
