A vibrant Mediterranean-inspired salad featuring roasted sweet potatoes, chickpeas, feta cheese, fresh herbs, and a bold lemon cumin dressing.
Ingredients
1 pound sweet potatoes (about 2–3 medium), scrubbed and sliced into 1/2-inch half-moons
1/4 cup olive oil, divided
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
4 cups cooked chickpeas (two 15.5-ounce cans, drained and rinsed)
1 cup crumbled feta cheese
1 cup green onions, thinly sliced
2 tablespoons pickled jalapeños, finely chopped
1/2 cup fresh parsley, roughly chopped
1/2 cup fresh basil leaves, roughly chopped
1/4 cup fresh lemon juice
2 teaspoons ground cumin
1 tablespoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 425°F. Lightly grease a large baking sheet.
2. In a large bowl, combine 2 tablespoons of the olive oil, paprika, garlic powder, and salt. Add the sliced sweet potatoes and toss until evenly coated. Spread them in a single layer on the baking sheet.
3. Roast for 15–20 minutes, flipping halfway through, until tender and lightly browned. Let cool for about 5 minutes after removing from the oven.
4. While the sweet potatoes roast, whisk together the lemon juice, remaining olive oil, cumin, minced garlic, oregano, salt, and black pepper in a large bowl until well combined.
5. Add the chickpeas, green onions, jalapeños, parsley, and basil to the bowl. Toss to coat everything evenly in the dressing. Adjust seasoning if needed.
6. Gently fold the roasted sweet potatoes into the chickpea mixture. Sprinkle feta cheese over the top and lightly toss. Garnish with extra herbs or green onions if desired. Serve immediately or chill before serving.
Notes
For extra freshness, add arugula just before serving.
For a creamier variation, mix a spoonful of Greek yogurt into the dressing.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
