Ingredients

12 oz fusilli pasta, cooked and cooled

1 cup corn (fresh or canned, drained)

1 cup black beans, drained and rinsed

1 cup finely chopped bell pepper

½ cup finely chopped red onion

¼ cup chopped fresh cilantro

⅔ cup ranch dressing, divided

⅔ cup mild or medium salsa, divided

1¼ tsp salt
-
½ tsp black pepper

2 cups coarsely chopped spinach

Chopped green onions, for garnish
Instructions

In a large mixing bowl, combine the cooked pasta, corn, black beans, bell pepper, red onion, cilantro, ⅓ cup ranch dressing, ⅓ cup salsa, salt, and pepper.

Mix well to ensure all ingredients are evenly coated.

Cover and refrigerate for at least 2 hours to chill and let flavors blend.

Just before serving, fold in the remaining ranch dressing, salsa, and chopped spinach.
