  • 1 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon black pepper
  • 4 cup low sodium vegetable broth
  • 1.5 pounds potatoes (about 6 medium), peeled and diced
  • 2 cups kale, finely chopped
  • 1/4 to 1/2 cup cream (optional)
  • Grated Parmesan cheese (optional)


Instructions

  • Heat a medium skillet over medium-high heat. Add canola oil, onion, carrots, celery, and sausage slices. Cook until onions become translucent and vegetables begin to soften.
  • Stir in garlic, salt, thyme, and black pepper. Cook for 1 minute to release the flavors.
  • Pour in the vegetable broth and add the diced potatoes. Bring the soup to a gentle simmer, then reduce to medium heat. Cover and cook for 15-20 minutes, stirring occasionally, until the potatoes and carrots are tender.
