Description

A comforting, creamy soup made with turkey sausage, cheese tortellini, and kale simmered in a rich, seasoned broth.


Ingredients

1 pound ground turkey sausage (mild or spicy)

1 small yellow onion, diced

3 cloves garlic, minced

3 tablespoons all-purpose flour

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 pinch cayenne pepper (optional)

1 teaspoon hot sauce

1/2 teaspoon mustard powder

1/4 teaspoon black pepper

1 pinch red pepper flakes

1 cup heavy cream

5 cups low-sodium vegetable broth

2 cups chopped kale

2 cups cheese-filled tortellini (refrigerated or frozen)

Salt, to taste


Instructions

1. In a large soup pot over medium-high heat, cook the ground turkey sausage and diced onion until browned and soft, 8-10 minutes. Drain grease.

2. Add the minced garlic and cook for another minute.

3. Stir in the flour and cook for 1-2 minutes to eliminate raw flour taste.

4. Mix in the basil, oregano, cayenne, hot sauce, mustard powder, black pepper, and red pepper flakes. Stir well.

5. Pour in the vegetable broth, scraping the pot to lift browned bits. Gradually stir in the heavy cream and bring to a gentle boil. Reduce heat to a simmer.

6. Add the tortellini and kale. Simmer 3-5 minutes until the tortellini is tender and kale is wilted.

7. Taste and season with salt. Start with 1/4 teaspoon and adjust.

8. Serve hot and enjoy!

Notes

If using frozen tortellini, extend the cooking time slightly.

Add extra broth when reheating if soup thickens.

For a milder soup, omit cayenne and reduce hot sauce.
