Description

A quick and flavorful sheet pan dinner featuring honey mustard glazed salmon with roasted broccoli and potatoes.


Ingredients

1/4 cup honey

3 tablespoons whole grain mustard

1 1/2 tablespoons olive oil, divided

1 teaspoon lemon zest

1 lemon, cut into wedges for serving

2 teaspoons finely minced garlic

1/2 teaspoon dried thyme

1/2 teaspoon fine salt, plus extra to taste

1/4 teaspoon ground black pepper

4 salmon fillets (about 4–5 ounces each)

Cooking spray

4–5 cups broccoli florets

1 pound small red or yellow potatoes


Instructions

1. Preheat the oven to 400°F.

2. Whisk honey, mustard, 1 tablespoon olive oil, lemon zest, garlic, thyme, salt, and pepper. Reserve 3 tablespoons for potatoes.

3. Coat salmon fillets with remaining sauce and set aside.

4. Lightly grease a rimmed baking sheet and spread potatoes on the pan.

5. Toss potatoes with reserved sauce and arrange cut-side down.

6. Roast potatoes for 15 minutes.

7. Move potatoes to one side of the sheet pan.

8. Add broccoli to the other side and drizzle with remaining olive oil and a pinch of salt.

9. Place salmon fillets in the center of the sheet pan.

10. Bake for 8–13 minutes until salmon flakes easily and vegetables are tender.

11. Serve immediately with lemon wedges.

Notes

Use thawed salmon for best texture.

Potatoes should start roasting first so they cook evenly.
