1/4 to 1/2 cup finely chopped red or yellow onion

1/2 green bell pepper, finely chopped (optional)

2 to 3 tablespoons chopped fresh parsley

2 to 3 tablespoons chopped fresh cilantro

2 to 3 tablespoons chopped fresh dill

1 tablespoon dried mint or 1/2 cup fresh mint, finely chopped

1 teaspoon sumac, or to taste (optional)

4 tablespoons fresh lime juice (from about 2 large limes)

3 tablespoons extra virgin olive oil
