Ingredients

  • 1 small red onion, finely chopped

  • Juice of 2 limes

  • 1/4 teaspoon salt, plus 1 tablespoon for cooking

  • 8 ounces (1/2 pound) cavatappi pasta

  • 1 pound shrimp, peeled and deveined

  • 1 red bell pepper, finely chopped

  • 2 cups cherry tomatoes, halved

  • 1/4 cup fresh cilantro, coarsely chopped

  • 2 teaspoons seafood seasoning

  • 3 tablespoons olive oil


Instructions

  • Marinate the Onion: In a large bowl, mix the chopped red onion with lime juice and 1/4 teaspoon salt. Let it sit while you prepare the other ingredients.

  • Cook the Pasta: Boil the cavatappi in a large pot of salted water until al dente. Drain and spread the pasta on a baking sheet to cool in the refrigerator for about 10–15 minutes.

  • Cook the Shrimp: In a medium pot, bring water to a boil with 1 tablespoon salt. Prepare a bowl of ice water. Boil the shrimp for about 2 minutes, just until pink and opaque. Immediately transfer them to the ice water to cool, then pat dry.

  • Combine Ingredients: Add the chopped bell pepper, cherry tomatoes, cilantro, shrimp, and chilled pasta to the bowl with the marinated onions. Drizzle with olive oil and sprinkle with seafood seasoning. Toss well to combine. Adjust salt to taste.
