Description

Simple Mediterranean Fish Tray Bake with Vegetables is a healthy sheet pan dinner made with white fish, cherry tomatoes, zucchini, and olives, baked in olive oil and herbs.


Ingredients

2 firm white fish fillets (about 6 ounces each)

1 cup cherry tomatoes, halved

1 large zucchini, thinly sliced into rounds

1/2 cup pitted Kalamata olives, roughly chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

2 tablespoons extra virgin olive oil

Salt and black pepper to taste

Optional: Lemon wedges, cooked brown rice, quinoa, roasted potatoes, red pepper flakes


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Spread cherry tomatoes and zucchini evenly on the sheet.

3. Place fish fillets among vegetables and scatter olives over top.

4. Sprinkle oregano, garlic powder, salt, and pepper. Drizzle with olive oil and gently toss vegetables.

5. Bake 15–18 minutes until fish flakes easily.

6. Serve immediately with lemon wedges and desired sides.

Notes

Use firm white fish like cod or halibut for best texture.

Do not overbake to prevent dryness.

Parboil potatoes first if adding them to the tray.
