Description

Slow Cooker Beef and Potatoes is a hearty one-pot meal made with tender beef stew meat, buttery potatoes, garlic, and savory broth cooked low and slow for rich flavor.


Ingredients

2 pounds beef stew meat, cut into 1-inch cubes

3 pounds potatoes, cut into large chunks

6 tablespoons unsalted butter, sliced

1 ounce dry onion soup seasoning mix

4 cloves garlic, minced

1 cup low-sodium beef broth

1/2 teaspoon freshly ground black pepper

Salt to taste (optional)

2 tablespoons fresh parsley, chopped


Instructions

1. Arrange the potato chunks evenly across the bottom of the slow cooker.

2. Place the cubed beef on top of the potatoes.

3. Sprinkle the dry onion soup seasoning mix evenly over the beef and potatoes.

4. Scatter the minced garlic over the top and season lightly with black pepper.

5. Distribute the sliced butter evenly over all the ingredients.

6. Pour the beef broth over everything.

7. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

8. Gently stir before serving, adjust seasoning, and garnish with parsley.

Notes

Use Yukon Gold potatoes for a buttery texture.

Avoid adding extra salt until tasting at the end.

For thicker sauce, add a cornstarch slurry during the last 20 minutes.
