Ingredients

  • 1 pound short-cut pasta (such as penne, gemelli, or fusilli)
  • Salt for boiling water
  • 1 to 2 tablespoons olive oil
  • 1 to 2 tablespoons mayonnaise
  • 4 ounces smoked salmon, shredded
  • 1/2 cup finely chopped orange or yellow bell pepper
  • 1/2 cup finely chopped celery
  • 1/4 cup chopped green onions
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • Pinch of dried dill
  • 1 tablespoon lemon juice


Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil (about 1 tablespoon salt for every 2 quarts of water).
    • Add the pasta and cook until al dente, following package directions.
    • Drain and rinse the pasta under cold water. Optionally, toss with a little olive oil to prevent sticking.
  • Combine Ingredients:
    • In a large mixing bowl, combine the cooled pasta, mayonnaise, olive oil, smoked salmon, bell pepper, celery, and green onions.
    • Season with salt, pepper, dried dill, and lemon juice.
    • Toss everything together until well mixed. Adjust seasoning as desired.
