Ingredients
- 1 pound short-cut pasta (such as penne, gemelli, or fusilli)
- Salt for boiling water
- 1 to 2 tablespoons olive oil
- 1 to 2 tablespoons mayonnaise
- 4 ounces smoked salmon, shredded
- 1/2 cup finely chopped orange or yellow bell pepper
- 1/2 cup finely chopped celery
- 1/4 cup chopped green onions
- 1 teaspoon salt
- Freshly ground black pepper, to taste
- Pinch of dried dill
- 1 tablespoon lemon juice
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil (about 1 tablespoon salt for every 2 quarts of water).
- Add the pasta and cook until al dente, following package directions.
- Drain and rinse the pasta under cold water. Optionally, toss with a little olive oil to prevent sticking.
- Combine Ingredients:
- In a large mixing bowl, combine the cooled pasta, mayonnaise, olive oil, smoked salmon, bell pepper, celery, and green onions.
- Season with salt, pepper, dried dill, and lemon juice.
- Toss everything together until well mixed. Adjust seasoning as desired.
- Chill and Serve:
- Serve immediately at room temperature or cover and chill in the refrigerator before serving.
