Description
Spicy Chili Garlic Noodles are a quick vegan noodle dish made with rice noodles, garlic, ginger, and a bold chili-infused sauce.
Ingredients
8 oz wide rice noodles
2 shallots, thinly sliced
5 cloves garlic, minced
1/3 cup chopped green onions (white parts only)
1 tablespoon freshly grated ginger
1 tablespoon vegetable or olive oil
4–5 tablespoons low-sodium soy sauce or tamari
1–3 tablespoons chili garlic sauce
1 tablespoon brown sugar or coconut sugar
1 tablespoon sriracha (optional)
2 teaspoons rice vinegar
1 tablespoon toasted sesame oil
1/2 teaspoon red pepper flakes (optional)
Instructions
1. Cook rice noodles according to package directions, drain, and set aside.
2. Heat oil in a pan and sauté shallots and garlic until golden.
3. Add green onion whites and ginger, cook until fragrant.
4. Stir in soy sauce, chili garlic sauce, sugar, sriracha, vinegar, sesame oil, and red pepper flakes.
5. Add noodles and toss to coat evenly.
6. Simmer briefly, adjust seasoning, and serve garnished.
Notes
Adjust chili garlic sauce to control heat. Add vegetables if desired.
