Ingredients

    • 2 tablespoons coconut oil

    • 1 medium onion, chopped

    • 3 to 4 garlic cloves, minced

    • 2 cups green peas (fresh or frozen)

    • 1â…“ cups coconut milk

    • 2 cups vegetable broth

    • 4 cups baby spinach

    • 1 cup fresh cilantro, chopped

    • 1 teaspoon paprika

    • 1 teaspoon curry powder

    • ¼ teaspoon chili powder (adjust to taste)

    • Salt and black pepper, to taste

Optional Garnish:

    • 1–2 tablespoons coconut milk

    • 1 tablespoon green peas

    • A few spinach leaves


Instructions

  • Warm the coconut oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent, about 2–3 minutes.

  • Stir in the green peas and cook for another 2–3 minutes.

  • Pour in the coconut milk and vegetable broth. Bring the soup to a gentle simmer and let it cook for about 10 minutes.

  • Remove from heat, then add the spinach and cilantro.

  • Blend the soup until smooth using an immersion blender. Alternatively, you can blend in batches using a standard blender, then return the soup to the pot.

  • Stir in the paprika, curry powder, and chili powder. Season with salt and pepper to your taste.

  • Pour into bowls and garnish with a swirl of coconut milk, a few spinach leaves, and green peas if desired. Serve warm.
