Instructions

Warm the coconut oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent, about 2–3 minutes.

Stir in the green peas and cook for another 2–3 minutes.

Pour in the coconut milk and vegetable broth. Bring the soup to a gentle simmer and let it cook for about 10 minutes.

Remove from heat, then add the spinach and cilantro.

Blend the soup until smooth using an immersion blender. Alternatively, you can blend in batches using a standard blender, then return the soup to the pot.

Stir in the paprika, curry powder, and chili powder. Season with salt and pepper to your taste.

Pour into bowls and garnish with a swirl of coconut milk, a few spinach leaves, and green peas if desired. Serve warm.
