Description
Spinach Artichoke Chicken Bake is a creamy, healthy dinner made with tender chicken, vegetables, and simple seasonings baked to perfection.
Ingredients
2 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
1 red bell pepper, finely chopped
½ medium yellow onion, finely chopped
2 cans (13.5 ounces each) quartered artichoke hearts, drained and squeezed of excess liquid
2 cups baby spinach, roughly chopped
½ cup mayonnaise
4 garlic cloves, minced
1 lemon, zested and juiced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ cup freshly grated parmesan cheese (optional)
Instructions
1. Preheat the oven to 400°F.
2. Cut the chicken into 1-inch pieces and place in a large bowl.
3. Add bell pepper, onion, artichokes, spinach, and parmesan if using.
4. In a separate bowl, mix mayonnaise, garlic, lemon zest and juice, oregano, thyme, salt, and pepper.
5. Pour the sauce over the chicken and vegetables and mix well.
6. Transfer to a 9×13-inch baking dish and spread evenly.
7. Bake uncovered for 25 to 30 minutes until chicken is fully cooked.
8. Serve with a slotted spoon to drain excess liquid.
Notes
Use a slotted spoon when serving to reduce excess liquid. Greek yogurt may replace part of the mayonnaise for a lighter flavor.
