Ingredients

For the Spicy Ginger Dressing:

3 tablespoons fresh ginger, minced

2 garlic cloves, minced

2 tablespoons soy sauce

1 tablespoon agave nectar

1/4 cup rice vinegar

1 tablespoon toasted sesame oil

2 tablespoons canola or vegetable oil

1/2 to 1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste
For the Spring Roll Salad:

8 ounces rice noodles

1 1/2 cups shredded green or purple cabbage

1 small cucumber, cut into thin matchsticks

2 small carrots, cut into thin matchsticks

1 medium sweet bell pepper, cut into thin matchsticks

1/4 cup chopped fresh cilantro
-
1/4 cup chopped fresh mint
-
1/4 cup chopped roasted peanuts
-
Extra cilantro and sesame seeds, for garnish

Instructions

Prepare the Dressing:
In a blender or food processor, combine the ginger, garlic, soy sauce, agave nectar, rice vinegar, sesame oil, canola or vegetable oil, and red pepper flakes. Blend until smooth. Season with salt and pepper to taste. Chill until ready to use. -
Cook the Noodles:
Prepare the rice noodles according to the package directions. Rinse with cold water until completely cooled. Drain thoroughly and place in a large mixing bowl. -
Assemble the Salad:
Add the shredded cabbage, cucumber, carrots, bell pepper, cilantro, and mint to the noodles. Toss gently to combine. -
Dress and Serve:
Just before serving, pour the spicy ginger dressing over the salad and toss until everything is evenly coated. Taste and adjust salt and pepper as needed. Garnish with chopped peanuts, extra cilantro, and sesame seeds.
