Ingredients
For the chicken meatballs
1 pound ground chicken
1 large egg, lightly beaten
2 garlic cloves, minced
2 green onions, thinly sliced, plus extra for garnish
1/3 cup seasoned bread crumbs
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 cup barbecue sauce
1/4 cup honey
1/4 cup water
For the broccoli slaw
1 bag (12 ounces) broccoli slaw
1/4 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons honey
2 tablespoons apple cider vinegar
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
For serving
Cooked rice
Extra sliced green onions
Instructions
1. In a large bowl, mix the ground chicken, egg, garlic, green onions, bread crumbs, smoked paprika, salt, and black pepper until just combined.
2. Shape the mixture into small meatballs.
3. Heat the olive oil in a large nonstick skillet over medium heat.
4. Add the meatballs in a single layer and cook until browned on all sides. Transfer them to a plate.
5. In the same skillet, whisk together the barbecue sauce, honey, and water.
6. Bring the sauce to a gentle simmer and cook for 1 minute.
7. Return the meatballs to the skillet and cook for a few more minutes, turning to coat, until the sauce thickens and the meatballs reach an internal temperature of 165°F.
8. Sprinkle with extra green onions.
9. To make the slaw, place the broccoli slaw in a large bowl.
10. In a small bowl or measuring cup, whisk together the Greek yogurt, mayonnaise, honey, apple cider vinegar, salt, and black pepper.
11. Pour the dressing over the broccoli slaw and toss until evenly coated.
12. Serve the sticky barbecue chicken meatballs with broccoli slaw and cooked rice.
Notes
Avoid overmixing the meatball mixture to keep the texture tender.
If the sauce thickens too quickly, add a splash of water while simmering.
