Description

Sticky, savory, and quick to prepare, this ginger soy glazed chicken is everything you want in a weeknight dinner. With its caramelized glaze, aromatic garlic and ginger, and juicy chicken thighs, it delivers bold flavor with minimal effort.


Ingredients

For the Marinade:

¼ cup brown sugar

3 tablespoons soy sauce

2 garlic cloves, minced

1 tablespoon freshly grated ginger

1 tablespoon cooking oil

Freshly ground black pepper (about 15 twists)

For the Chicken:

1.75 pounds boneless, skinless chicken thighs (about 8 thighs)

½ tablespoon cooking oil

Optional Garnishes:

2 green onions, sliced

1 teaspoon sesame seeds


Instructions

1. In a small bowl, combine brown sugar, soy sauce, minced garlic, grated ginger, cooking oil, and freshly cracked black pepper. Stir until the sugar is dissolved and ingredients are well mixed.

2. Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken and coat each piece evenly. Cover and refrigerate for at least 30 minutes or up to 24 hours.

3. Heat a large skillet over medium heat. Add ½ tablespoon of oil and swirl to coat the pan. Place half of the marinated chicken thighs in the skillet and cook until browned and cooked through, about 5–6 minutes per side. Remove and repeat with the remaining chicken.

4. After cooking all the chicken, pour the leftover marinade into the same skillet. Bring it to a full boil, scraping the browned bits from the pan with a whisk. Let it simmer until thickened to a glaze consistency (3–5 minutes).

5. Turn off the heat, return the chicken to the skillet, and coat it in the thickened glaze. Garnish with sliced green onions and sesame seeds if desired.

Notes

You can marinate the chicken up to 24 hours in advance for deeper flavor. If desired, add a pinch of red pepper flakes to the marinade for heat or a splash of lime juice for brightness.
